I first met and worked with John Kane when he was the long standing chef at the University Club in San Francisco. We did some incredible soup recipes together, not to mention our mutual collection of gourmet recipes including incredible wild mushroom recipes utilizing every varietal of mushrooms out in the marketplace. I hope through our ongoing publishing you get to see all of the incredible gourmet recipes we did together, including such mushrooms as abalone mushrooms, henna of the woods mushrooms, candycaps, and let us not forget the star of our current cover, the eryngii mushroom.
John has moved on since then, and has started his own restaurant up in Grass Valley, California where you can sample first hand his incredible creations at Kane’s Restaurant. We have high hopes of launching our own gourmet recipes collection together of “Composed Soups”, but more about that later, right John?
